- 1 cup SunRice Jasmine Rice
- 1tablespoons peanut oil
- 1kilograms beef chuck steak, cut into 3cm pieces
- 1 brown onion, sliced
- 2 kaffir lime leaves
- 1/3 cup AYAM Thai Massaman Curry Paste
- 400grams Dutch potatoes, peeled, cut into 3cm pieces
- 1tablespoons brown sugar
- 2tablespoons AYAM Fish Sauce
- 270mL AYAM Coconut Milk
- 1/4 cup roasted peanuts, chopped
- 1 spring onion, sliced
Description
Enjoy tender beef in a rich and fragrant slow-cooker massaman beef curry. This easy-to-make Thai dish will hit the spot on any occasion.
Method
Step 1 of 4
Cook rice following packet instructions.
Step 2 of 4
Heat oil in a large, deep non-stick frying pan over medium-high heat. Add beef, cut into 3cm pieces, and cook, turning occasionally, for 2-3 minutes or until browned. Transfer to the bowl of a 5.5L slow cooker.
Step 3 of 4
Add brown onion to pan and cook, stirring, for 2 minutes until softened slightly. Add to slow cooker. Add kaffir lime leaves, paste, potatoes, sugar, sauce and coconut milk. Cover with lid and cook on low for 8 hours or until beef and potatoes are tender.
Step 4 of 4
Divide rice among bowls. Spoon over beef. Garnish with peanuts and spring onion. Serve.
