  • 1/4 cup Woolworths pepitas
  • 1tablespoons extra virgin olive oil
  • 600grams Woolworths chicken schnitzels
  • 350grams Woolworths cranberry & kaleslaw kit
  • 1 small avocado
  • 1/4 bunch bunch coriander, leaves picked

Description

Combining crispy schnitzel with a refreshing cranberry and kaleslaw salad, this budget-friendly weeknight dinner will make you forget takeout.

Method

Step 1 of 4

Preheat oven to 230°C/210°C fan-forced. Line a large baking tray with baking paper. Add schnitzel to tray and bake for 20 minutes, turning halfway, until cooked through. Thinly slice schnitzel.

Step 2 of 4

Meanwhile, heat a large frying pan over medium-high heat. Add pepitas and toss for 2 minutes or until toasted. Remove from pan.

Step 3 of 4

Place slaw and dressing from packet in a large bowl. Toss with half of the pepitas and cranberries.

Step 4 of 4

Slice avocado. Place salad on plates. Top with avocado, schnitzel and coriander, then remaining cranberries and pepitas. Serve.
