- 3 limes
- 1 small pineapple
- 3/4 bunch mint, leaves picked
- 600mL Woolworths thickened cream
- 1/4 cup icing sugar mixture
- 460grams Woolworths double unfilled sponge cake
- 1/3 cup honey
Description
Indulge in this iconic Aussie dessert that combines the sweet richness of a cake with vibrant pineapple flavours. It’s an affordable and irresistible treat that’s perfect for summer gatherings.
Method
Step 1 of 3
Juice 2 limes. Cut pineapple into quarters lengthways. Remove skin from 3 pineapple pieces and cut into chunks. Blend lime juice, chopped pineapple and half of the mint until smooth. Pour into prepared pan. Freeze for 1 hour 30 minutes or until the top is icy. Using a fork, scrape ice into small pieces. Freeze and repeat process.
Step 2 of 3
Using an electric mixer, beat cream and icing sugar in a large bowl until stiff peaks form. Cut remaining pineapple and remaining lime into slices.
Step 3 of 3
Using a serrated knife, trim top of cakes to level. Place 1 cake on a plate. Top with one-third of the cream and half of the honey, then the remaining cake. Top with remaining cream, pineapple and lime. Remove granita from the freezer and sprinkle on top of cake. Drizzle with remaining honey. Serve sprinkled with remaining mint.
