Green sauce
  • 1 bunch coriander, washed & dried well
  • 2 jalapeños
  • 2 spring onions, chopped
  • 1 clove garlic, crushed
  • 1 lime, juiced
  • 1/2 cup Woolworths Greek-style natural yoghurt
  • 1tablespoons extra virgin olive oil
  • 1 lime, juiced
  • 1tablespoons Woolworths smoked paprika
  • 1tablespoons Woolworths ground cumin
  • 1teaspoons garlic powder
  • 1teaspoons chilli powder
  • 2tablespoons extra virgin olive oil
  • 1.60kilograms Macro whole chicken
  • 120grams mixed leaf salad

Description

Transport tastebuds to the heart of South America with this deliciously easy Peruvian-style chicken with green sauce.

Method

Step 1 of 4

Combine lime juice, paprika, cumin, garlic powder, chilli powder, salt and oil in a bowl. Place chicken, breast-side down, onto a cutting board. Using kitchen scissors, cut along either side of the back bone and remove. Turn chicken over, and using the palm of your hand, press down to flatten. Rub spice mixture all over chicken.

Preheat a barbecue or chargrill pan to medium-high. Add chicken to grill, breast-side up, and cook covered for 30 minutes. Turn chicken and cook for a further 10-15 minutes or until browned and cooked. Transfer to a plate. Cover and rest for 10 minutes.

Step 3 of 4

Meanwhile, to make green sauce, chop coriander stems. Pick leaves, reserving 1/2 cup. Grill jalapeño for 5 minutes or until skin blisters. Transfer to a cutting board. Cool, remove seeds and chop. Process jalapeño, onion, garlic, lime juice, salt, yoghurt, oil, remaining coriander leaves and coriander stems until smooth. Season.

Step 4 of 4

Place chicken on a plate. Sprinkle with reserved coriander. Serve with mixed leaf, green sauce and lime.
