- 270grams dried udon noodles
- 1 head broccoli, cut into small florets, stem halved and finely chopped
- 1/2 cup Woolworths smooth peanut butter
- 2tablespoons salt-reduced soy sauce
- 1tablespoons Woolworths pure honey
- 1/4 cup sesame oil
- 2 cloves garlic, crushed
- 2 spring onions, sliced
- 2teaspoons Woolworths chilli flakes
- 1/4 cup Woolworths granulated nuts
Description
Creamy peanut butter meets tender broccoli in this quick noodle dish that's delicious and satisfying.
Method
Step 1 of 3
Cook noodles and broccoli in a large saucepan of boiling water for 2 minutes or until just tender. Drain, reserving 1 cup of the water. Wipe saucepan clean.
Step 2 of 3
Whisk reserved water, peanut butter, soy sauce, honey and 1 tbs oil in a jug until smooth.
Step 3 of 3
Heat 1 tbs remaining oil in the same pan over medium-high heat. Add garlic and cook, stirring, for 1-2 minutes or until fragrant. Add peanut butter mixture and bring to the boil until sauce thickens. Reduce heat to medium. Add noodles and broccoli, reserving a few small florets, and toss to combine. Spoon into bowls. Toss through remaining broccoli, then top with onion, chilli and nuts. Serve drizzled with remaining sesame oil.
