- 1tablespoons extra virgin olive oil
- 500grams diced chicken breast
- 2 cloves garlic, crushed
- 3/4 cup sundried tomato halves
- 2teaspoons dried Italian herbs
- 2teaspoons paprika
- 1 1/2 cups risoni
- 1L chicken stock
- 1/2 cup thickened cream
- 120grams baby spinach leaves
- 50grams parmesan, finely grated
Description
This one-pan wonder brings together succulent chicken and perfectly cooked risoni in a creamy, dreamy sauce, proving true love can be both delicious and effortless.
Method
Step 1 of 4
Heat oil in a large deep-frying pan over medium heat. Add chicken, and cook, stirring occasionally, for 8 minutes or until cooked through and browned.
Step 2 of 4
Add garlic, tomato, herbs and paprika. Cook, stirring constantly, for 2 minutes or until garlic is fragrant.
Step 3 of 4
Add risoni and stock and stir well to combine. Reduce heat to low and cover with lid. Cook for 15 minutes, until risoni is cooked through, stirring occasionally to ensure it doesn’t stick to the bottom of the pan.
Step 4 of 4
Add cream and three-quarters of the spinach and stir to combine. Cook for 1 minute or until thickened and spinach is wilted slightly. Remove from heat. Sprinkle with parmesan. Serve with remaining spinach.
