  • 300grams penne
  • 100grams Woolworths streaky bacon, coarsely chopped
  • 2 cloves garlic
  • 500grams Woolworths chicken thigh fillets, fat trimmed
  • 1tablespoons Woolworths smoked paprika
  • 1 cup Woolworths light thickened cream
  • 1/2 cup grated parmesan
  • 60grams baby spinach leaves
  • 1/4 bunch continental parsley, leaves picked

Description

Combining juicy chicken, wilted spinach, crispy bacon and hearty pasta in a creamy garlic sauce, this delectable one-pan meal is perfect for busy weeknights.

Replace spinach with 1 cup frozen peas.

Method

Step 1 of 4

Cook pasta in a large deep-frying pan for 12 minutes or until al dente. Drain. Refresh. Wipe pan clean.

Step 2 of 4

Return pan to heat. Add bacon and cook, stirring, for 2-3 minutes or until golden brown. Add garlic and cook for a further 30 seconds or until fragrant. Drain on paper towel.

Step 3 of 4

Sprinkle chicken all over with paprika. Add to pan and cook for 4 minutes or until browned. Turn chicken and cook, covered, for 4 minutes or until almost cooked through. Transfer to a plate.

Step 4 of 4

Add cream and half of the parmesan to pan. Bring to the boil. Return pasta, chicken and half of the bacon to pan. Reduce heat and simmer for 2-3 minutes or until heated. Stir in spinach until it wilts. Serve sprinkled with parsley, remaining bacon and remaining parmesan.
