- 1/4 cup plain flour
- 2teaspoons paprika
- 4 chicken thigh fillets
- 2tablespoons extra virgin olive oil
- 1 brown onion, diced
- 2 carrots, sliced on angle in 2cm pieces
- 825grams Woolworths apricot halves in juice
- 40grams Woolworths French onion soup mix
- 450grams Woolworths microwave long-grain white rice
- 1/4 bunch parsley, leaves picked, roughly chopped
Description
Delivering a sweet and savoury explosion of flavour with minimal cleanup, this one-pan apricot chicken is a weeknight hero.
Method
Step 1 of 5
Add flour and paprika to a shallow bowl. Season. Mix to combine.
Step 2 of 5
Add chicken fillets, one at a time, and toss in flour mixture to coat. Heat half of the oil in a large deep-frying pan over medium heat. Cook chicken, in batches, for 3 minutes each side, or until cooked through and browned. Remove and set aside.

Add remaining oil, onion and carrot and cook, stirring constantly, for 2 minutes or until softened.
Step 4 of 5
Add apricot and juice and soup mix. Stir to combine. Add chicken back to pan. Reduce heat to low. Cover with lid and cook, stirring occasionally, for 15 minutes or until thickened. Remove from heat.
Step 5 of 5
Meanwhile, cook rice according to packet instructions. Sprinkle apricot chicken with parsley. Serve.
