- 1/4 cup vegetable oil
- 4 round rice paper sheets
- 1/4 red cabbage, shredded
- 1teaspoons caster sugar
- 2tablespoons red wine vinegar
- 1/4 bunch coriander
- 250grams Woolworths beef mince
- 35grams Woolworths taco seasoning
- 420grams Woolworths no-added-salt black beans, drained, rinsed
- 1 avocado, finely chopped
- 3 Qukes® baby cucumbers, finely chopped
Description
Embrace the savoury richness of Mexican-style beef and the delicate crunch of crispy rice paper in this affordably delicious dish that will delight your tastebuds.
Method
Step 1 of 4
Heat 2 tbs oil in a large non-stick frying pan over medium-heat. Shallow-fry rice paper, in batches, for 30 seconds to 1 minute, or until crispy. Drain on paper towel. Wipe pan.
Step 2 of 4
Place cabbage, sugar and vinegar in a glass bowl. Pick coriander leaves, then finely chop stems.
Step 3 of 4
Heat remaining oil in the same pan over medium-high heat. Add beef and cook, stirring to break up any lumps, for 3-4 minutes or until browned. Add seasoning, coriander stems, beans and 1/4 cup water, and cook for 3-4 minutes or until water evaporates and beef is cooked.
Step 4 of 4
Place rice paper on plates. Top with beef mixture, pickled cabbage, avocado, cucumber and coriander leaves. Season with freshly cracked black pepper. Serve.
