  • 2 lemons
  • 500grams chicken thigh fillets, cut into 12 pieces
  • 2 cloves garlic, crushed
  • 5mL extra virgin olive oil cooking spray
  • 4 Mission Carb Balance Original Wraps
  • 200grams tzatziki
  • 60grams baby spinach leaves
  • 250grams cherry tomatoes, sliced
  • 1 Lebanese cucumber, sliced
  • 1 small red onion, thinly sliced
  • 1/4 bunch mint, small leaves picked
  • 8 metal skewers

Description

Impress loved ones with tangy lemon chicken and refreshing tzatziki conveniently served in a soft, low-carb wrap for a quick and easy meal.

Method

Step 1 of 3

Zest and juice 1 lemon, then cut remaining lemon into wedges. Combine chicken, garlic, juice and zest in a bowl. Thread chicken onto 8 skewers. Spray with oil. Heat a barbecue or chargill over medium-high heat. Cook skewers, turning occasionally, for 8-10 minutes or until browned and cooked.

Step 2 of 3

Spray wraps with oil. Grill for 30 seconds each side or until golden brown.

Step 3 of 3

Spread wraps with tzatziki. Top with spinach, tomato, cucumber, onion and skewers. Sprinkle with mint and remaining zest. Serve with lemon.
