Salsa
  • 2 cherry tomatoes, finely diced
  • 3 cucumbers, finely diced
  • 1 lemon, juiced
  • 1/4 bunch continental parsley, finely chopped
  • 2 cups Woolworths Greek-style natural yoghurt
  • 2 cloves garlic, minced
  • 4 white pita bread
  • 900grams Woolworths BBQ lamb kebabs with mint & honey
  • 125grams mixed pitted olives
  • 1 lemon, cut into wedges
  • 1/2 cup hot sauce
  • 1tablespoons pickled onion
  • 1/4 bunch continental parsley leaves

Description

Celebrate Easter with a flavourful journey to the Mediterranean. Savour succulent lamb souvlaki, grilled to perfection and served with a refreshing salsa, pickled onion, mixed olives, tzatziki dip and pita bread.

Method

Step 1 of 3

To make the salsa, combine tomato, cucumber, lemon juice and half of the parsley in a small bowl. To make the garlic dip, combine yoghurt, garlic and remaining parsley in a small bowl.

Step 2 of 3

Cut each pita bread into quarters. Grill lamb on an oiled barbecue grill for 15 minutes, turning frequently until cooked through.

Step 3 of 3

Arrange lamb, olives, lemon, hot sauce, pickled onion, pita, salsa and garlic dip on a large platter. Sprinkle with parsley. Serve.
