  • 500grams lamb mince
  • 1 cup Woolworths panko breadcrumbs
  • 1 egg
  • 2tablespoons Woolworths Moroccan seasoning
  • 2 garlic cloves, crushed
  • 1/4 bunch parsley, chopped
  • 1 red capsicum, deseeded, halved, sliced
  • 2 red onions, halved, sliced
  • extra virgin olive oil cooking spray
  • 1 cup Greek-style natural yoghurt
  • 1/4 bunch mint, finely chopped
  • 4 pita bread

Description

Enjoy a satisfying and balanced weeknight dinner with this easy kofta traybake served with a refreshing mint yoghurt.

Method

Step 1 of 4

Preheat oven to 200°C/180°C fan-forced. Add lamb, breadcrumbs, egg, seasoning, garlic and half of the parsley to a bowl.

Step 2 of 4

Mix well and shape into 16 kofta. Line a 30x20cm baking tray with baking paper. Arrange kofta, capsicum and onion on the tray.

Step 3 of 4

Spray with oil and bake for 15 minutes. Switch to grill function and grill for 5-8 minutes until kofta are golden brown. Remove from oven.

Step 4 of 4

Mix yoghurt and mint in a bowl. Drizzle 2 tbs yoghurt dip over kofta. Garnish with remaining parsley. Serve with bread and remaining yoghurt.
