  • 85packets mango-flavoured jelly crystals
  • 4 mangoes
  • 1/2 cup Woolworths evaporated milk
  • 300milliliter Woolworths thickened cream
  • 1/4 bunch mint, small leaves picked

Description

Sweet, creamy and bursting with tropical mango flavour, this easy dessert is perfect for entertaining guests.

Method

Step 1 of 4

Place jelly crystals in a heatproof jug. Stir in 1 cup boiling water. Set aside for 10 minutes to cool.

Step 2 of 4

Meanwhile, coarsely chop 3 mangoes. Blend chopped mango with 2 tbs water until smooth. Transfer to a bowl. Add milk and ½ cup thickened cream. Mix well.

Step 3 of 4

Stir jelly liquid into mango mixture until combined. Pour into 6 x ¾ cup ramekins. Cover and chill for 6 hours or until firm.

Step 4 of 4

Slice remaining mango. Using an electric mixer, beat remaining cream in a bowl to firm peaks. Transfer to a piping bag fitter with a 1cm star nozzle. Pipe cream over mango puddings. Top with mango and mint. Serve.
