  • 1kilograms chicken wings
  • 1/4 cup light soy sauce
  • 2tablespoons dark soy sauce
  • 2tablespoons oyster sauce
  • 1tablespoons hoisin sauce
  • 1tablespoons caster sugar
  • 2 garlic cloves, crushed
  • 3centimeters piece ginger, sliced
  • 1teaspoons sesame oil
  • 1/2teaspoons ground white pepper
  • 1tablespoons vegetable oil
  • 2tablespoons Shaoxing wine or dry sherry
  • 2teaspoons sesame seeds, toasted
  • 2 spring onions, sliced

Description

Crispy on the outside, juicy on the inside, these Hong Kong-style chicken wings are a simple appetiser that will be the star of your next celebration.

Method

Step 1 of 4

Using a sharp knife, cut tips, at joint, from chicken wings (set aside or reserve for another use). Cut remaining wing, at joint, in half to separate the drummette and flat wing. Place in a large bowl.

Step 2 of 4

Whisk sauces, sugar, garlic, ginger, sesame oil, pepper and ½ cup water in a large jug. Add sauce mixture to chicken and mix well. Cover and refrigerate for 4 hours to allow flavours to develop.

Step 3 of 4

Heat vegetable oil in a large frying pan over medium-high heat. Drain chicken and reserve marinade. Cook chicken, in batches, for 1-2 minutes each side or until browned. Transfer to a plate. Return all chicken to pan. Add reserved marinade and wine. Bring to the boil. Reduce heat, simmer, turning occasionally, for 15 minutes or until chicken is cooked. Transfer chicken to a plate. Cover to keep warm. Increase heat and boil sauce for 2-3 minutes or until thickened slightly.

Drizzle sauce over chicken. Serve sprinkled with sesame seeds and onion.
