- 1L milk, plus 1 tbs extra
- 1teaspoons fine salt
- 2tablespoons vinegar
- 1 large sweet potato, peeled, cubed
- 1tablespoons extra virgin olive oil
- 500grams lean beef mince
- 35grams Woolworths taco seasoning mix
- 170grams Woolworths gourmet leaf mix
- 1/2 red onion, thinly sliced
- 320grams Mix-a-Mato tomatoes, roughly chopped
- 1 avocado, sliced into wedges
- 400grams Woolworths creamed cottage cheese
- 1tablespoons hot honey

Method
Step 1 of 6
To make the cottage cheese, add milk to a medium pot over medium heat. Heat milk until it’s very hot, but not boiling, and small bubbles form. Turn off heat.
Step 2 of 6
Add salt and vinegar and stir once briefly. Leave mixture to stand for 10 minutes.

Place cheesecloth or clean cloth in a strainer over a bowl. Scoop curds from milk into cheesecloth and allow to drain for 5 minutes. Transfer curds to an airtight container and refrigerate for 2 hours or until chilled. Stir through 1 tbs milk. Keep refrigerated until ready to use.

Preheat oven to 200°C/180°C fan-forced. Line a large baking tray with baking paper. Toss sweet potato in half of the oil. Place on prepared tray and bake for 25-30 minutes or until tender and beginning to brown.

Meanwhile, heat remaining oil in a large frying pan over medium heat. Add mince and cook, breaking up lumps with a wooden spoon, for 5 minutes or until lightly browned. Add taco seasoning and cook for 5 minutes or until well-coated.
Step 6 of 6
Divide sweet potato, salad leaves, onion and tomato among serving bowls. Top with avocado, cottage cheese and mince. Drizzle with hot honey to serve.
