Minty yoghurt dip
  • 2 cups Woolworths Greek-style natural yoghurt
  • 2teaspoons dried mint
  • 1 small garlic clove, crushed
  • 1kilograms lamb mince
  • 1 large brown onion, finely chopped
  • 1/4 bunch continental parsley, leaves picked, finely chopped
  • 1tablespoons seven spice mix (see tip)
  • 6 pieces Lebanese bread
  • 1/4 cup extra virgin olive oil
  • 1/3 bunch mint, leaves picked
  • 1 lemon, cut into wedges

Description

Savour the flavours of summer with this grilled lamb kafta, seasoned with aromatic spices and served on warm Lebanese bread.

Method

Step 1 of 3

Combine lamb, onion, parsley and spice mix in a large bowl. Season with freshly ground black pepper. For each kafta, carefully split a piece of bread in half to form 2 rounds. Place 1 piece of bread, browned-side down on a clean work surface. Top with ⅓ cup lamb mixture, pressing down and spreading to cover bread. Repeat with remaining bread and lamb mixture.

Heat 2 tsp oil in a large non-stick frying pan over medium-high heat. Cook kafta, lamb-side down, for 1-2 minutes or until browned and almost cooked. Carefully invert onto a plate, then slide bread-side down back into pan. Cook for a further 2 minutes or until bread is crispy. Transfer to a chopping board. Repeat with remaining oil and kafta.

To make yoghurt dip, combine yoghurt, mint and garlic in a bowl. Cut kafta bread into wedges. Sprinkle with mint. Serve with yoghurt dip and lemon.
