  • 500grams Macro chicken breast fillets
  • 2teaspoons Woolworths mixed herbs
  • 2 cloves garlic, crushed
  • 125grams Qukes® baby cucumbers
  • 200grams cherry tomatoes
  • 1 lemon
  • 450grams Woolworths microwave brown rice, heated
  • 1/2 cup stuffed green olives
  • 66grams Woolworths Danish feta, crumbled
  • 1/4 bunch continental parsley, small leaves picked

Description

Savour the flavours of the Mediterranean with these gluten-free Greek-style chicken rice bowls. Easy to make and packed with flavour, these bowls are a weeknight dinner dream come true.

Method

Step 1 of 4

Cut chicken into 2cm pieces. Combine chicken, herbs, garlic and 1 tbs oil in a bowl.

Step 2 of 4

Heat a large non-stick frying pan over medium-high heat. Cook chicken, in batches, for 3-4 minutes or until cooked and browned.

Step 3 of 4

Cut cucumber in half lengthways. Slice tomato.

Step 4 of 4

Zest and juice lemon. Whisk remaining oil with juice and zest in a bowl. Spoon rice into bowls. Top with chicken, cucumber, tomato, olives and feta. Drizzle with lemon oil. Sprinkle with parsley and freshly ground black pepper. Serve.
