- 2 1/2 cup plain flour
- 2 1/4 cup pure icing sugar, sifted (save 1.5 cups)
- 250grams unsalted butter, softened
- 1/2teaspoons vanilla bean paste
- 1/2teaspoons baking powder
- 1 free range egg yolk
- 3/4 cup slivered almonds, chopped

Method
Step 1 of 4
Preheat oven to 160°C. Line 2 large baking trays with baking paper. Beat butter and icing sugar in the bowl of a stand mixer until pale and creamy. Add egg yolk and vanilla and beat until combined.

Sift flour and baking powder together over butter mixture. Add almonds and stir until combined and a dough forms.
Step 3 of 4
Roll tablespoonfuls of mixture into short logs then shape into crescents. Place on trays and bake for 20 minutes or until pale golden. Cool on trays for 5 minutes.
Step 4 of 4
Meanwhile, sift one-third of the extra icing sugar over the base of a shallow tray. Add half the warm biscuits. Sift another one-third of the icing sugar over and add remaining biscuits. Sift over remaining icing sugar. Cool to room temperature and serve.
