- 1 2/3 cups Woolworths thickened cream
- 2 eggs
- 1 egg yolk
- 1/2 cup golden syrup
- 6 plain shredded wheat biscuits, coarsely chopped
- 1/3 cup Woolworths unsalted roasted macadamia nuts, coarsely chopped
- 3 peaches, cut into wedges
Description
A luscious frozen dessert with juicy peaches and crunchy macadamia, this golden syrup semifreddo will delight loved ones on a balmy day.
Method
Step 1 of 4
Grease and line a 21x11cm (base) loaf pan with baking paper, allowing it to overhang on 2 long sides. Freeze until required.
Step 2 of 4
Using an electric mixer, beat cream in a large bowl until soft peaks form (do not over-beat). Place eggs, egg yolk and cup syrup in a heatproof bowl over a saucepan of simmering water (don’t let the bowl touch water). Whisk for 5 minutes or until pale and thick. Cool slightly.
Step 3 of 4
Gradually fold egg mixture through cream mixture until combined. Fold through two-thirds of the biscuits. Pour into prepared pan. Smooth surface. Freeze for 6 hours or until firm.
Step 4 of 4
Turn semifreddo onto a plate. Sprinkle with macadamia and remaining biscuits. Drizzle with remaining syrup. Serve topped with peaches.
