  • 7grams instant yeast
  • 2tablespoons caster sugar
  • 100grams unsalted butter, slightly softened
  • 1/4 cup firmly packed brown sugar
  • 1teaspoons ground cinnamon
  • 2 1/3 cups The Healthy Baker Plain Flour
  • 1 cup Sunbeam Australian Sultanas
  • 1 cup icing sugar mixture

Description

Indulge in the golden delight of a frying-pan sultana scroll, a sumptuous pastry filled with sweet Australian sultanas, perfect for any celebration or to simply enjoy with a cup of tea.

Method

Step 1 of 3

Preheat oven to 200°C/180°C fan-forced. Grease a 22x20cm (base) non-stick oven-proof frying pan. Heat 1 cup milk. Add yeast and caster sugar. Whisk to combine. Stand for 5 minutes or until frothy. Chop 60g butter into cubes and set aside. Place remaining butter in a bowl. Add brown sugar and cinnamon and mix well.

Place flour in a large bowl. Rub in chopped butter. Add yeast mixture and sultanas. Mix to form a soft dough. Turn out onto a floured surface. Knead briefly. Roll dough out between sheets of baking paper to form a 20x30cm rectangle. Spread top of dough with butter mixture. Cut dough lengthwise into 6 equal strips. Roll one strip of dough, buttered side facing inwards, into a coil and place at centre of base of prepared pan. Shape the remaining strips of dough around the centre roll, starting each strip at the end of the previous.

Bake for 20-25 minutes or until golden brown. Cool. Place icing sugar in a bowl. Add enough of the remaining milk to make a smooth icing. Drizzle icing over scroll. Allow to set. Serve.
