- 1 lemon, halved
- 2tablespoons extra virgin olive oil
- 1 cos lettuce, chopped
- 2 Lebanese cucumbers, coarsely chopped
- 250grams cherry tomatoes, halved
- 60grams pitted Kalamata olives, sliced
- 1/4 bunch continental parsley, leaves picked, coarsely chopped
- 1/2 cup tzatziki

Description
This vibrant fish gyro fattoush combines crispy flathead fillets with a refreshing salad and creamy, flavourful tzatziki.
Method
Step 1 of 3
Cook fish in a 5L air fryer at 200°C for 12 minutes, turning halfway, or until golden brown.
Step 2 of 3
Zest and juice 1 lemon half. Cut remaining half into wedges.
Step 3 of 3
Combine juice, zest and oil in a small bowl. Place lettuce, cucumber, tomatoes, olives and parsley in a large bowl. Add dressing and toss to combine. Spoon onto plates. Cut fish in half diagonally. Top salad with fish. Drizzle with tzatziki. Serve with lemon wedges.
