  • 500grams Woolworths RSPCA Approved diced chicken leg fillet
  • 125grams MasterFoods plum sauce marinade
  • 2teaspoons extra virgin olive oil
  • 100grams mixed leaf salad
  • 500grams microwave brown rice
  • 250grams cherry tomatoes, halved

Description

A budget-friendly weeknight dinner that combines plum-flavoured chicken with brown rice, cherry tomatoes and mixed leaf for a hearty meal.

Method

Step 1 of 3

Combine chicken and marinade in a medium bowl until coated.

Step 2 of 3

Heat 2 tsp oil in a large frying pan over high heat. Cook chicken for 10-12 minutes, stirring, or until cooked through and slightly charred.

Step 3 of 3

Heat rice according to packet instructions. Divide rice among serving bowls. Top with chicken, salad and tomato. Season with freshly ground black pepper. Serve.
