  • 1.50kilograms chicken drumsticks
  • 1tablespoons vegetable oil
  • 35grams Woolworths taco seasoning mix
  • 1 1/2 cups Woolworths Thai jasmine rice
  • 500grams Woolworths sweet corn, kernels removed
  • 420grams Woolworths canned no-added-salt black beans, drained and rinsed
  • 1/4 bunch coriander, roughly chopped

Description

Simple to prepare and sure to impress, take chicken drumsticks to a new level with Mexican-style seasoning in this flavour-packed dish.

Method

Step 1 of 3

Preheat oven to 220°C/200°C fan-forced. On a baking tray, toss drumsticks with oil and seasoning to coat evenly. Bake for 25-30 minutes or until golden and cooked through.

Step 2 of 3

Meanwhile, cook rice according to packet instructions. While still warm, stir through corn and beans.

Step 3 of 3

Divide rice and drumsticks among dishes. Garnish with coriander. Serve.
