Instruction tip
Swap tip:For a milder, smokier flavour, replace chilli powder with smoked paprika.
Method
Step 1 of 4
To make filling, place bacon in a cold non-stick medium frying pan over medium-high heat. Cook, stirring occasionally, for about 5-6 minutes, or until crisp. Remove and drain on paper towel.
Step 2 of 4
Meanwhile, beat cream cheese in a large bowl with a wooden spoon until smooth. Add bacon, jalapeños, cheese, chilli powder and half of the chives. Stir to combine. Transfer to a piping bag with the corner snipped.
Step 3 of 4
Lay wonton wrappers on a clean board. Pipe filling across the centre of each, leaving a 1cm gap on either side from the edge of the wrapper. Wet all 4 edges with water. Fold the left and right edges over the filling. Roll from bottom to top to seal it in the shape of a small spring roll.
Step 4 of 4
Preheat an air fryer to 200°C for 5 minutes. Place jalapeño poppers, seam-side down, in a single layer in the air fryer. Spray with oil. Air fry for 6 minutes at 200°C or until brown. Remove. Garnish with remaining chives. Swirl taco sauce with sour cream in a small bowl. Serve with jalapeño poppers.
