- 1 large white washed potato, very thinly sliced
- 1tablespoons extra virgin olive oil
- 1/2 cup shredded mozzarella cheese
- 1/4 cup rocket leaves
- 1/4 cup fresh mozzarella, torn
- 1 tomato, sliced
- 3 slices prosciutto
Description
With a delicious prosciutto, tomato, rocket and mozzarella filling, this crispy potato sandwich will make lunchtime extra flavoursome and crunchy.
Method
Step 1 of 4
Preheat oven to 220°C/200°C fan-forced. Line a large baking tray with baking paper.
Step 2 of 4
Arrange potato slices in a single layer, slightly overlapping, to make a 22x16cm rectangular shape. Drizzle with oil and season with salt.
Step 3 of 4
Bake for 25 minutes or until potato is cooked through and edges are crisp. Place a sheet of baking paper over potato and carefully flip over. Remove baking paper and top potato with shredded mozzarella. Bake for a further 5 minutes or until mozzarella is melted.
Step 4 of 4
Place rocket, fresh mozzarella, tomato and prosciutto on one half of the potato. Season with freshly ground black pepper. Using the baking paper underneath the potato, fold the potato over the filling. Serve.
