  • 1/4 bunch coriander, leaves picked
  • 1/2 cup Yumi’s Green Goddess Dip
  • 1 avocado, sliced

Description

Indulge in a vibrant veggie bowl packed with Yumi’s crispy corn fritters, creamy avocado, juicy cherry tomatoes and peppery baby rocket.

Method

Step 1 of 3

Preheat oven to 180°C/160°C fan-forced. Line a large baking tray with baking paper. Using a large sharp knife, cut kernels from cob. Cut bread into 1cm pieces. Place tomato and corn on prepared tray. Drizzle with 1 tbs oil. Season with freshly cracked black pepper and bake for 10 minutes.

Add fritters and bread to tray. Drizzle with 1 tbs oil and bake for a further 5-8 minutes or until golden.

Step 3 of 3

Combine rocket, coriander, remaining oil and half of the dip in a large bowl. Divide between serving bowls. Top with croutons, tomato, corn, avocado and fritters. Serve drizzled with remaining dip.
