  • 1 lemon, zested, juiced

Description

Nothing says summer sensation like this juicy, vibrant chicken pasta dish that will certainly wow on any occasion.

Method

Step 1 of 3

Cook pasta following packet instructions, reserving cup cooking liquid. Heat 1 tbs oil in a large frying pan over medium heat. Add chicken and cook, stirring occasionally, for 3-4 minutes or until browned and almost cooked. Transfer to a plate.

Step 2 of 3

Heat 1 tbs oil in same pan. Add onion and garlic and cook, stirring occasionally, for 2 minutes or until softened. Return chicken to pan. Add tomato and cook, stirring, for 1-2 minutes or until chicken is cooked. Add pasta, reserved cooking liquid and half of the feta. Stir to coat. Whisk remaining oil with lemon juice and zest. Add lemon mixture to pasta. Toss to combine.

Step 3 of 3

Divide pasta among bowls. Top with rocket and remaining feta. Season with freshly cracked black pepper. Serve.
