- 3 avocado, seeded, sliced into cubes
- 3tablespoons lemon juice
- 1/4 cup olive oil
- 10grams coriander, chopped
- 1 pinch salt (to taste)
- 450grams cooked chicken breasts, cubed
- 1 cucumber, peeled, seeded, cut into cubes
- 2 apple, cored and diced
Description
If you have leftover chicken, apples and avocado in your fridge, this salad comes together in minutes and is light and refreshing.
Method
Step 1 of 2
In a high speed blender or food processor, blitz 1/3 of the avocado, the lemon juice, olive oil and half of the coriander until smooth. Season with salt as per your taste.
Step 2 of 2
In a big bowl, toss half of the dressing, avocado, chicken, cucumber and apple. To serve, put the salad at the bottom of the dish and drizzle in the dressing and chopped coriander.
