Cherry jam
  • 350grams cherries, pitted
  • 1/2 cup Woolworths pure honey
  • 1 cup jam sugar
  • 1teaspoons vanilla bean paste
  • 225grams unsalted butter
  • 2 eggs
  • 1 egg yolk
  • 1 1/2 cups Woolworths almond meal
  • 1 cup icing sugar, sifted
  • 1/4 cup plain flour
  • 100grams cherries, pitted
  • 2teaspoons icing sugar
  • 500grams vanilla ice-cream

Description

A summer dessert that sings with the sweetness of in-season cherries, this cherry frangipane tart will win hearts on any occasion.

Method

Step 1 of 3

To make the cherry jam, combine ingredients in a large saucepan and stir over low heat until sugar dissolves. Increase heat and bring to the boil. Reduce heat and simmer, stirring occasionally, for 30 minutes or until thick and jam sets when tested. Cool.

Step 2 of 3

Preheat oven to 200°C/180°C fan-forced. Grease a 22cm (6-cup) cast iron frying pan. Using an electric mixer, beat butter in a bowl until pale and creamy. Add eggs and beat until combined. Stir in almond meal and icing sugar. Sift flour over mixture and mix well. Spoon batter into prepared pan. Add cherries. Bake for 35 minutes or until golden brown.

Dust with icing sugar. Serve with ice-cream and jam.
