- 1 carrot, grated
- 10 pitted dried dates
- 1/4 cup almonds
- 1teaspoons vanilla extract
- 3/4 cup desiccated coconut
- 16 almond flakes
- 8 goji berries
Description
These fun carrot cake balls, made with carrot, dried dates, desiccated coconut, almonds and goji berries, are so delicious that kids won't even know they're eating carrot. A perfect snack for Easter.
Method
Step 1 of 2
Place carrot, dates, almonds, vanilla and 1/2 cup coconut in a small food processor and process to a fine crumb.
Step 2 of 2
Shape carrot mixture into 8 balls. Place remaining coconut in a small bowl. Roll each ball in coconut to coat. Garnish each ball with 2 almond flakes for bunny ears and a goji berry for the nose. Serve.
