  • 1 large carrot
  • 1/4 bunch coriander
  • 200grams bean vermicelli noodles
  • 1tablespoons vegetable oil
  • 250grams Woolworths beef mince
  • 2tablespoons Woolworths sweet chilli sauce
  • 2teaspoons fish sauce
  • 1 long red chilli, sliced
  • 1 baby cos lettuce, leaves separated
  • 2tablespoons fried shallots
  • 1/4 bunch bunch mint, leaves picked

Description

For a quick and easy meal, savour the vibrant flavours of beef larb, vermicelli noodles and fresh vegetables for the perfect summer dish.

Method

Step 1 of 4

Thinly slice carrot into strips and place in a colander. Pick coriander leaves, then finely chop stems.

Step 2 of 4

Place noodles in a large heatproof bowl and cover with boiling water. Stand for 3 minutes or until soft. Drain noodles over carrot, then refresh under cold water.

Step 3 of 4

Heat oil in a medium frying pan over medium-high heat. Add beef and cook, stirring to break up any lumps, for 3-4 minutes or until browned. Add coriander stems, sauces and half of the chilli, and cook for 2-3 minutes or until sticky and browned.

Step 4 of 4

Place beef mixture, noodles, carrot and lettuce on plates. Serve topped with shallots, mint, coriander leaves and remaining chilli.
