- 1kilograms brushed potatoes, coarsely chopped into equal-sized pieces
- 3 long green chillies
- 2centimeters piece ginger, finely chopped
- 2tablespoons vegetable oil
- 1/2teaspoons black mustard seeds
- 1/3packets fresh curry leaves
- 1teaspoons Woolworths ground turmeric
- 2 lemons
- 3teaspoons sea salt
- 1/4 bunch coriander, leaves picked
Description
A simple Indian side dish made with tender potatoes and aromatic spices, this batata bhaji will delight tastebuds. Enjoy with Gujarati-style aamras and whole wheat puri.
Method
Step 1 of 3
Place potatoes in a large saucepan and cover with cold water. Bring to the boil over medium-high heat. Boil for 10 minutes or until almost tender. Drain.
Step 2 of 3
In a small food processor, process chillies and ginger to a chunky paste. Place oil and mustard seeds in a frying pan. Heat over medium-high heat for 1-2 minutes until seeds start to pop. Add chilli mixture and cook, stirring often, for 1-2 minutes. Stir in curry leaves and turmeric. Cook for 1 minute or until fragrant.
Step 3 of 3
Juice 1 lemon, then cut remaining lemon into wedges. Add potato to pan and evenly coat potato with chilli mixture. Cook, stirring occasionally, for 5-8 minutes or until golden brown and tender. Season with lemon juice and salt. Sprinkle with coriander. Serve with lemon.
