Method

Step 1 of 2

Preheat oven to 180°C/160°C fan-forced. Grease a 12-hole (1/3-cup capacity) muffin tray. Whisk oil and syrup in a large mixing bowl until combined. Add banana, egg, yoghurt and vanilla. Whisk until combined. Fold through flour and baking powder until just combined. Fold through half of the blueberries.

Step 2 of 2

Spoon mixture evenly into prepared holes. Top with remaining blueberries. Bake for 15-20 minutes or until a skewer inserted into a muffin comes out clean. Stand for 5 minutes before transferring to a wire rack to cool. Serve.
