- 500grams frozen Woolworths potato minis, thawed
- 100grams streaky bacon, cut into 4cm pieces
- 12 eggs
- 5mL extra virgin olive oil cooking spray
- 1/2 punnet chives, chopped
Description
Make your Easter long weekend brighter and tastier with these crispy potato nests filled with savoury bacon and fluffy eggs. They're easy to whip up and perfect for a crowd.

Use-it-up tip :Instead of bacon, use any deli meat you've got in the fridge.
Method
Step 1 of 2
Preheat oven to 220°C/200°C fan-forced. Grease a 12-hole (1/3-cup capacity) muffin tray. Place 4 potato minis into each prepared hole. Push down to line base and sides of muffin hole to create a “nest”.
Step 2 of 2
Coil a piece of bacon and place inside each nest. Crack 1 egg into each hole, spray with oil and bake for 20-25 minutes or until cooked to your liking. Stand in tray for 5 minutes. Serve sprinkled with chives.
