  • 250grams Birds Eye Air Baked Barramundi
  • 1 lime, zested, juiced
  • 2teaspoons sugar
  • 1tablespoons rice wine vinegar
  • 1tablespoons soy sauce
  • 2tablespoons extra virgin olive oil
  • 1 long red chilli
  • 1/2 green cabbage, shredded
  • 3 spring onions, sliced
  • 1 red onion, sliced
  • 100grams snow peas, sliced lengthways
  • 1 Lebanese cucumber, sliced
  • 2tablespoons sesame seeds, toasted
  • 2tablespoons fried shallots

Description

This light and refreshing Asian-style barramundi slaw salad makes a perfect summer meal.

Method

Step 1 of 3

Cook fish in a 5L air fryer at 200°C for 12 minutes, turning halfway, or until golden brown. Thinly slice onion. Place onion and vinegar in a bowl. Thinly slice lettuce and avocado.

Step 2 of 3

Thinly slice chilli. Combine lime zest, juice, sugar, vinegar, soy and oil. Stir in chilli.

Step 3 of 3

Combine cabbage, onions, snow peas and cucumber in a bowl. Add dressing and toss to combine. Spoon onto plates. Top with sesame seeds, shallots and fish. Serve.
