  • 10 ripe plums
  • 1 3/4 cup caster sugar
  • 1teaspoons Woolworths ground cinnamon, ground
  • 2tablespoons cornflour
  • 3 large egg whites
  • 60grams unsalted butter, melted
  • 1/4 cup plain flour
  • 100grams Woolworths flaked almonds
  • 1 1/2 cups coconut flakes
  • 1/2 cup Woolworths traditional rolled oats
  • 1/2 cup double cream

Description

Roasted plums meet a crunchy almond crumble, creating a delicious dessert that celebrates the bounty of seasonal fruit. Best enjoyed with a scoop of vanilla ice-cream, this treat takes comfort food to a new level.

Method

Step 1 of 3

Preheat oven to 170°C/150°C fan-forced. Grease a 1.5L (6-cup capacity) rectangle baking dish. Cut 5 plums into wedges. Combine plum wedges, 3/4 cup sugar, cinnamon and cornflour in a large bowl. Transfer to a baking dish. Grease and line a baking tray with baking paper. Cut remaining plums in half. Toss with 1 tbs sugar and place on prepared baking tray.

Using an electric mixer, beat egg whites, butter and remaining sugar in a large bowl until pale and frothy. Fold through flour, almonds, coconut and oats until combined.

Spoon mixture over plums in dish and bake for 45-50 minutes or until golden. Add the tray with the sugared plums to the oven for the final 20 minutes of cooking. Serve crisp topped with roasted plums and cream.
