Chimichurri
- 2 cloves garlic, crushed
- 1teaspoons dried chilli flakes
- 1 1/2 cup fresh flat-leaf parsley, finely chopped
- 1 eschalot, finely chopped
- 2teaspoons lime rind, finely grated
- 1tablespoons lime juice
- 2teaspoons dried oregano
- 2tablespoons red wine vinegar
- 2/3 cup olive oil
- 2 lemon, halves, chargrilled (to serve)
- 8 thin scotch fillet (or porterhouse steaks)
Description
Zesty chimichurri sauce is a delicious match for barbecued steak. Plus, it's an easy sauce to whip up and bring with you to a barbecue picnic at the park.
Method
Step 1 of 2
Combine parsley, garlic, eschalot, oregano, vinegar, rind, juice, chilli and 1/2 cup of the oil in a bowl. Season with salt and pepper. Stand until required.
Step 2 of 2
Meanwhile, drizzle remaining oil over steaks. Season with salt and pepper. Heat a barbecue or grill pan over high heat. Cook steaks for 3-4 minutes on each side or until cooked to your liking. Stand, covered, for 5 minutes to rest. Serve steaks with chimichurri and chargrilled lemon.
