Lettuce

Lettuce is a leafy plant with many varieties and colours including green, yellow and even a dark red. Lettuce can be purchased as an entire head, with leaves tightly wrapped around each other, or loose in a mixed bag. Popular varieties include Iceberg, Baby Cos, and Fancy lettuce.

Iceberg lettuce is pale green and white, with a light, refreshing taste and crisp, crunchy texture.

Also known as Romaine, this variety is usually white at the base with bright green ends. It has a slightly tangy taste and a crunchy texture.

All year Fancy Lettuce

Also known as Coral and Butter, Fancy lettuce is available in green or red varieties and features a head of loose, tightly curled leaves with a slight bitterness.

Where is it grown

Lettuce is grown in both fields and hydroponic systems across Australia. Hydroponic lettuce is grown on narrow trays, with roots dangling in nutrient water solution without the use of soil.

How to pick

If selecting lettuce heads, choose those that are firm with crisp, bright leaves. For loose leaf lettuce, look for vibrant, smooth and springy leaves.

How to store

Keep lettuce chilled in the crisper drawer of your fridge for up to five days and only wash when ready to eat. Store loose leaf lettuce in an airtight container, padded with paper towel. Dressed lettuce will go soggy after 24 hours.

How to use

Usually used raw in a salad, you can also cook cos lettuce on the barbecue alongside meat and seafood. Fresh lettuce makes a great addition shredded in Mexican dishes, or keep the cups whole and enjoy as san choy bau.

Food saver tips
  • If your lettuce has the roots still attached, don’t cut them off. Wrap a wet paper towel around the base to keep the roots moist and your lettuce fresh for longer.
