  • 1.50kilograms chicken drumsticks
  • 4tablespoons AYAM Thai Green Curry Paste
  • 1 1/2 cups SunRice Jasmine Rice
  • 300mL chicken stock
  • 270mL AYAM Coconut Milk
  • 2teaspoons fish sauce
  • 1 long red chilli
  • 1/4 bunch coriander , leaves picked
  • 1 lime, halved

Description

Wow guests this summer with a hearty Thai green chicken curry packed with flavour.

Method

Step 1 of 3

Preheat oven to 200°C. Grease a 20x30cm baking dish. Place chicken in a bowl. Add 2 tbs paste, then toss to coat.

Step 2 of 3

Add rice, stock, coconut cream, sauce and remaining paste to the dish and stir to combine.

Step 3 of 3

Place chicken in dish and bake for 30 minutes, covered, with foil. Carefully remove foil and stir the rice around. Cook for a further 10 minutes, uncovered, until rice is tender, chicken is cooked and liquid is absorbed. Finely chop chilli. Top chicken and rice with chilli, coriander and lime.
