  • 2/3 cup caster sugar
  • 1/3 cup brown sugar, firmly packed
  • 1 egg, plus 1 yolk
  • 1 1/3 cups plain flour
  • 1/2teaspoons bicarbonate of soda
  • 180grams dark chocolate, chopped
  • 2teaspoons sesame seeds

Description

Combining the rich, nutty flavour of tahini with the satisfying crunch and flavour of chocolate chunks, these delightful cookies make a perfect treat for loved ones.

Cookie dough can be made up to a month ahead. Cover and freeze. Thaw in fridge overnight before baking.

Method

Step 1 of 3

Preheat oven to 180°C/160°C fan-forced. Grease and line 2 large oven trays with baking paper. Using an electric mixer, beat butter, tahini and both sugars in a large bowl until pale. Add egg and egg yolk, and beat until combined. Add flour and bicarbonate of soda, and beat until just combined. Fold in half of the chocolate.

Spoon 1/4 cup chocolate mixture onto prepared oven tray and gently shape into a round without flattening. Repeat with remaining mixture to make 12 cookies, allowing about 5cm in between each to allow for spreading. Press remaining chocolate on top and scatter with sesame seeds.

Step 3 of 3

Bake, in batches, for 15-20 minutes or until slightly soft and fudgy at the centre. Cool on trays. Serve.
