- 4 Shepard avocados, mashed
- 2teaspoons Old El Paso Guacamole Spice Mix
- 1 vine-ripened tomato, finely chopped
- 1 red onion, finely chopped
- 2 limes, juiced
- 1/4 cup coriander leaves
- 1 jalapeño, deseeded, finely chopped
- 227grams canned pineapple pieces in juice, drained
- 240grams jumbo cooked prawn cutlets with tails on
- 1tablespoons sunflower oil
- 350grams Old El Paso Tortilla Chips
Description
Whip up an unforgettable spicy guacamole with Old El Paso Guacamole Spice Mix. Serve with this incredible pineapple salsa, jumbo prawn cutlets and Old El Paso Tortilla to get the fiesta started.
Method
Step 1 of 3
Combine avocado, 1 tsp spice mix, tomato, half of the onion and three-quarters of the lime juice in a bowl.
Step 2 of 3
Chop half of the coriander. Combine chopped coriander, jalapeño, pineapple, and remaining juice and onion in a bowl.
Step 3 of 3
Place prawns in a bowl. Add remaining spice mix and toss to coat. Heat oil in a large frying pan over medium-high heat. Cook prawns for 5 minutes or until curled and changed in colour. Serve guacamole with pineapple salsa, prawns and chips. Sprinkle with remaining coriander.
