  • 1 cup Woolworths milk, warmed
  • 7grams sachet instant dry yeast
  • 1/2 cup Woolworths pure honey
  • 4 1/3 cups plain flour, plus extra for dusting
  • 1teaspoons fine salt
  • 300grams salted butter, softened
  • 4 eggs, 1 lightly beaten
  • 1tablespoons Macro Organic extra virgin oil
  • 3 garlic cloves, crushed
  • 2 sprigs rosemary, leaves removed, finely chopped
  • 1tablespoons flaked sea salt

Description

An easy-to-prepare treat for celebrations, these soft and fluffy brioche rolls are infused with salted honey, rosemary and garlic for a delicious bite.

Method

Step 1 of 5

Preheat oven to 170°C/150°C fan-forced. Line a large (20x30cm) baking dish with baking paper.

Step 2 of 5

In a small jug, add milk, yeast and 1/4 cup honey, and stir to combine. Stand for 5 minutes or until foamy.

Step 3 of 5

Add flour, salt, milk mixture, 150g butter and 3 eggs to the bowl of a stand mixer fitted with a dough hook. Mix on low speed for 8-10 minutes or until smooth and combined. Transfer to a bowl and cover. Rest for 30 minutes or until almost doubled in size.

Meanwhile, heat oil in a small frying pan over medium heat. Add garlic and rosemary and cook, stirring constantly, for 2 minutes or until fragrant. Remove from heat and combine with remaining butter in a small bowl. Add remaining honey and stir to combine.

Punch down dough and divide into 2 equal portions. Lightly flour work surface. Roll each piece out to a 40cm square. Spread with half of the butter mixture. Cut into 6 strips and roll up tightly. Place into prepared baking dish. Repeat with remaining dough and butter mixture. Brush tops with beaten egg. Sprinkle with sea salt. Bake for 25 minutes or until golden brown and cooked through. Serve.
