Roasted potato galette with smoked salmon

- 1kilograms Woolworths brushed potatoes, peeled, grated
- 2tablespoons unsalted butter
- 2tablespoons extra virgin olive oil
- 1/3 cup crème fraîche
- 100grams sliced smoked salmon
- 1/4 punnet chives, finely sliced
Description
A feast for the senses, this roasted potato galette with smoked salmon will impress everybody with its satisfying flavour combination.
Method
Step 1 of 3
Place potato in a colander over a bowl and cover with a paper towel. Squeeze liquid from potato and allow to drain for 5 minutes. Preheat oven to 220°C/200°C fan-forced.
Step 2 of 3
Heat a 24cm frying pan on medium-low heat. Add 1 tbs butter and oil. Add potato and press down firmly. Cook for 15 minutes until the base is brown and crispy. Top with remaining butter and oil and bake
for 15 minutes until the edges are crispy and brown.
Step 3 of 3
Remove from oven and flip onto a serving plate. Spread crème fraîche over potato galette. Top with smoked salmon. Garnish with chives. Season with freshly ground black pepper. Serve.
