  • 1 head garlic, plus 2 cloves extra, crushed
  • 2tablespoons Macro extra virgin olive oil
  • 20grams unsalted butter, melted
  • 1/4 cup kecap manis
  • 400grams button mushrooms
  • 1/2 punnet thyme, leaves picked

Description

Combine tender mushrooms with roasted garlic and fresh thyme to create an easy, flavourful side dish that will complement any main.

Method

Step 1 of 3

Preheat oven to 220°C/200°C fan-forced. Cut garlic head in half crossways, then brush with 1 tsp oil. Place in a roasting pan. Roast for 20 minutes or until beginning to soften.

Step 2 of 3

Meanwhile, combine remaining oil, butter, kecap manis and crushed garlic in a large bowl. Add mushroom and mix well. Stand for 20 minutes, stirring occasionally.

Step 3 of 3

Add mushroom mixture to pan with garlic head. Roast for a further 15-18 minutes or until mushrooms are golden brown and tender. Sprinkle with thyme. Serve.
