- 10 large ripe peaches
- 1 cup apple cider vinegar
- 1 cup raw sugar
- 1 brown onion, finely chopped
- 4 long red chillies, coarsely chopped
- 4 cloves garlic
- 1 orange, juiced
Description
Juicy peaches meet fiery red chillies in this unique and flavourful condiment that's perfect for adding a touch of heat and sweetness to your favourite dishes.

Method
Step 1 of 2
Bring a large saucepan of water to the boil. Using a small sharp knife, mark an ‘X’ on the base of each peach. Prepare an ice water bath in a medium bowl. Add peaches to boiling water and cook for 1 minute. Using a slotted spoon, carefully remove peaches and immediately submerge into iced water for 1-2 minutes or until skin begins to peel away.

Peel peaches, then coarsely chop and transfer to a medium saucepan over high heat. Add remaining ingredients and bring to a boil. Reduce heat to medium, partially cover with a lid, and simmer for 25-30 minutes or until peaches are pulpy. Remove from heat. Cool for 5 minutes. Using a stick blender, blend until smooth. Cool. Store in an airtight container in the fridge for up to 5 days or label, date, and freeze for up to 3 months.
