  • 5 egg whites
  • 1/2teaspoons cream of tartar
  • 1 1/4 cups caster sugar
  • 1tablespoons cornflour
  • 2teaspoons white vinegar
  • 2teaspoons vanilla bean paste
  • 300milliliter Woolworths thickened cream
  • 125grams strawberries, sliced
  • 125grams raspberries
  • 75grams blueberries
  • 2 passionfruit, pulp removed

Description

Create a delightful summer dessert that's both visually stunning and irresistibly delicious. This easy passionfruit and mixed berry pavlova will wow every time.

Method

Step 1 of 4

Preheat oven to 120°C/100°C fan-forced. Using a pencil and a plate as a guide, mark a 20cm circle on a piece of baking paper. Grease baking tray, then line with prepared paper, pencil-side down.

Step 2 of 4

Using an electric mixer, beat egg whites and cream of tartare in a large bowl until firm peaks form. Gradually add sugar, 2 tbs at a time, beating well between additions, until sugar has dissolved and mixture forms stiff peaks. Beat in cornflour, vinegar and 1 tsp vanilla.

Step 3 of 4

Spoon dollops of egg mixture onto prepared tray. Bake for 1 hour and 15 minutes or until pavlova feels dry to touch. Turn oven off. Leave pavlova in oven to cool completely.

Step 4 of 4

Using an electric mixer, beat thickened cream and remaining vanilla in a large bowl until soft peaks form. Transfer pavlova to a plate. Top with cream and berries. Drizzle with passionfruit. Serve.
