  • 1/3 cup hot milk
  • 1 1/2tablespoons instant coffee
  • 2 cups plain flour
  • 3teaspoons baking powder
  • 1/2 cup firmly packed brown sugar
  • 1/2 cup Cobram Estate Light Extra Virgin Olive Oil
  • 150grams dark chocolate, finely chopped
  • 1tablespoons milk

Description

With a subtle extra virgin olive oil flavour and hints of coffee and chocolate, these fluffy scones are perfect for morning or afternoon tea.

Method

Step 1 of 3

Preheat oven to 200°C/180°C fan-forced. Line a large baking tray with baking paper. Combine hot milk and coffee in a jug.

Step 2 of 3

Combine flour, baking powder and sugar in a large bowl. Make a well at centre. Stir in milk mixture and oil until a soft dough forms. Add 100g chocolate and mix well. Turn dough out onto a lightly floured surface and press into a 10cm disc, about 3cm thick. Cut into 8 equal triangles. Brush with milk. Place triangles on prepared tray and bake for 12-14 minutes or until lightly golden.

Melt remaining chocolate in a microwave-safe bowl on high for 1-2 minutes, stirring, until smooth. Serve scones drizzled with chocolate.
