  • 250grams pizza dough, at room temperature
  • 1/3 cup onion relish
  • 3 yellow nectarines, sliced
  • 1/4 cup extra virgin olive oil
  • 1tablespoons basil pesto
  • 1 buffalo mozzarella, torn
  • 1/2 bunch basil, leaves picked

Description

A delightful appetiser that pairs the sweetness of nectarines with the aromatic freshness of basil. This flatbread is perfect to enjoy on its own or as a complement to any meal.

Instead of mozzarella, you can use crumbled feta.

Method

Step 1 of 3

Preheat oven to 230°C/210°C fan-forced. Grease and line a large tray with baking paper. Stretch dough out to form a 30x20cm oval.

Step 2 of 3

Spread relish over pizza base. Top with nectarine and drizzle with 1 tbs oil. Bake for 20 minutes or until golden.

Step 3 of 3

Combine pesto with remaining oil in a bowl. Top pizza with mozzarella. Drizzle pesto oil over pizza. Serve sprinkled with basil and freshly ground black pepper.
