  • 4 eggs, at room temperature
  • 1/4 cup extra virgin olive oil
  • 4 bacon rashers, rind removed, chopped
  • 2 slices sourdough bread, torn into small pieces
  • 1 baby cos lettuce, chopped
  • 1/2 bunch kale, chopped
  • 1/2 cup Woolworths Caesar salad dressing
  • 40grams parmesan, shaved

Description

With just a few simple ingredients, this easy kale Caesar salad is a tastebud adventure you won't want to miss.

Method

Step 1 of 3

Place eggs in a small saucepan. Cover with cold water. Bring to the boil, stirring (this helps centre the yolks). Boil for 6 minutes for medium or until cooked to your liking. Refresh under cold water. Peel and slice.

Step 2 of 3

Meanwhile, heat 1 tbs oil in a large frying pan over medium-high heat. Cook bacon, stirring, for 3-4 minutes or until crispy. Drain on paper towels. Wipe pan clean. Add remaining oil to same pan. Heat over medium-high heat. Add bread and cook, turning, for 2-3 minutes or until golden brown. Drain on paper towels.

Step 3 of 3

Combine lettuce, kale, dressing and half of the parmesan in a bowl and toss to combine. Top with bacon, egg and bread. Serve sprinkled with remaining parmesan.
