- 6 mangoes, chopped
- 1/4teaspoons Woolworths ground ginger
- 1/4teaspoons Woolworths ground cardamom
- 1/4 cup pure icing sugar, sifted
- 4 saffron threads
- 1 1/2tablespoons ghee, melted
- 1tablespoons Woolworths unsalted pistachios, toasted, chopped
Description
An Indian summer staple, this easy-to-make Gujarati-style aamras (velvety mango puree) is ready in 15 minutes. It pairs perfectly with batata bhaji and whole wheat puri.
Method
Step 1 of 2
In a food processor, process mango, ginger, cardamom and icing sugar until creamy and smooth. Add a pinch of salt. Strain through a fine sieve into a bowl, extracting as much purée as possible. Stir through saffron. Cover and refrigerate for 1 hour or until cold.
Step 2 of 2
Serve drizzled with ghee and sprinkled with pistachio.
